Cookies: Eddie’s Hot Chocolate Gingersnaps & Iced Brown Butter Spice Cookies
Hot Chocolate Gingersnaps:
Ingredients:
• 4oz grated chocolate 100% cocoa
• 1 ½ tbsp of fresh grated ginger
• 1tsp baking soda
• ¼ tsp nutmeg – whole nutmeg
• ¼ tsp pre-ground cinnamon
• ¼ tsp pre-ground clove
• ¼ tsp cayenne pepper, plus another ¼ tsp set aside
• 2tbsp cocoa powder
• 1 stick butter (salted) softened
• ½ cup packed light brown sugar
• ¼ cup white granulated sugar, plus ½ cup
• 1 ½ cups all-purpose flour
• ½ cup molasses
• 2oz Fireball whiskey
Directions:
1. Grate chocolate and ginger and set aside
2. In a large bowl sift flour and combine the dry spices and cocoa powder.
3. using microwave heat 1 ½ tsp water till boiling add baking soda to the water and dissolve.
4. In mixing bowl cream butter and sugars until fluffy.
5. Add molasses, ginger, whiskey, chocolate and baking soda and mix till combined.
6. Slowly add dry ingredients, mix till well combined.
7. Turn the dough out onto plastic wrap and refrigerate for 20 minutes.
8. Using cookie scooper, scoop cookies to make sure they are all the same size.
9. Roll dough into balls.
10. Combine additional white sugar and cayenne in small bowl.
11. roll dough in sugar mixture and place on cookie sheet.
12. Bake at 350 degrees Fahrenheit or 176 degrees Celsius for 15 mins.
13. Let cool 10--15 mins and serve
Iced Brown Butter Spice Cookies:
Ingredients:
For the cookies:
• 1 lb. butter (salted)
• 1/3cup granulated white sugar
• 2/3 cup light brown sugar
• ¼ tsp ground cinnamon
• ¼ tsp ground nutmeg
• ¼ tsp ground clove
• 1 tsp baking soda
• 2 large eggs
• 1 tbsp pure vanilla extract
• 3 ½ -- 4 cups all-purpose flour
For the Icing:
• 1 ½ cups confectioners’
• 1/3 cup whole milk
• Pinch of cream of tartar
• 1 tbsp egg white powder
• 1 tsp almond extract
• Lifesaver candies
• Gel food colorings
Directions:
For the cookies:
1. In a small sauce pan melt butter and cook till browned over medium heat. You will know the butter is properly browned when it begins to smell nutty and turns a golden
to slightly golden brown. About 10 to 15 minutes.
2. Remove from heat and let cool.
3. In a large bowl combine flour, baking soda, and dry spices.
4. Once butter has cooled pour into mixing bowl with sugar and mix well.
5. Add eggs and vanilla.
6. Slowly add dry ingredients and mix till dough comes together.
7. Turn dough out onto plastic wrap and refrigerate for 20 minutes.
8. Remove dough from fridge and roll out to approx. ¼ an inch.
9. Using your favorite cookie cutter (Christmas tree) stamp out cookies and place on an ungreased cookie sheet
10. Bake at 350 degrees Fahrenheit or 176 degrees Celsius for 15 minutes.
11. Cool completely and decorate as desired
For the Icing:
1. Place confectioners sugar in a bowl and add milk till you get the desired consistency
2. Add extract and desired color.
