Dish: Caribbean Style Shrimp Mole
1 chili guajillo, diced
2 chili mulato, diced
2 chili pasilla, diced
3 ancho chili, diced
2 chili costeno, diced
1/3 cup almonds, toasted
1/3 cup sesame seeds
½ cup raisins
2 garlic cloves
1 tbsp coconut oil
½ medium plantain
2 plum tomatoes
1 tbsp cinnamon
2 tbsp grated bittersweet chocolate
2 cups water
1 lb shrimp, cleaned & deveined
¼ cup roasted sesame seeds
Reconstitute peppers in boiling water, drain – more seed nibs, set aside in a bowl.
Toast almonds & sesame seeds in the oven for about 5 mins. Grind fine into a powder in a vitamix or food processor. Soak raisins in hot water – drain & set aside.
In a pan with the coconut oil, sauté garlic & ½ plantain. Broil the tomatoes in the over until tops are slightly charred. Melt chocolate in a double broiler.
In a blender/vitamix, add peppers, chocolate, plantains, almond/sesame powder, tomatoes. Toss the shrimp in the pan and add mixture. Salt & pepper to taste.
