Episode 301: Tarik's Audition Recipe: Kofte with Chermoula

Dish: Kofte with Chermoula

1 lb ground lamb
1 lb ground bison
1 tbsp urfa biber
1 tbsp sweet paprika
1 tsp cumin
½ tsp cinnamon
¼ cup parsley, chopped
Salt to taste
1 clove garlic
½ bunch parsley
½ bunch cilantro
2 tsp capers, rinsed well
1 lemon, juiced
1 tsp cayenne
2 tsp cumin, toasted & ground
1 cup olive oil


For the kofte combine both meats and spices and mix by hand until well mixed. Head a small pan, add a couple tbsp of olive oil, shape a small piece and cook through. If salt needs to be adjusted do so, and you’re ready.

For the chermoula, place all ingredients except oil. Turn on blender and slowly add oil until it comes together (not too oily). Adjust salt level and you’re ready.

Shape kofte into 3 oz shaped footballs.

Preheat over to 325F. Place kofte on a sheet pan and place in over to cook 7-8 minutes.

Once done, remove from over. Place chermoula in a warm piece of pita. Add the kofte then add cherry tomatoes and julienne romaine, serve. Enjoy.
