Dish: Tom's Fried Oyster, Slaw and Melon

Ingredients:

1 watermelon
½ head cabbage
12 mint leaves
½ cup mirin
¼ cup honey
12 oysters, shelled
1 cup mosa
1 cup corn starch
¼ cup corn meal
2 tsp garlic powder
½ tsp paprika
1 cup mayo
½ cup sweet chili sauce
8 oz fresh uni
1 tsp Worcestershire
1 tsp hot sauce
Canola oil


Directions:


Mix mirin, honey & a pinch of salt. Peel watermelon & cut into 1 inch slabs. Put melon & honey mix into vac bag & vacuum seal.

Cut cabbage in 18 inch strips, chiffonade mint. Mix with a bit of mayo, salt, pepper, lime juice and mirin until just coated.

Mix cornmeal, mosa, paprika, onion powder, garlic powder & corn meal. Toss oysters in corn meal & press lightly. Allow to rest. Heat oil to 360F. Fry oysters for 1.5 minutes.

Take 1 cup mayo, ¼ cup sweet chili oil, a tsp of Worcestershire & whisk with uni.

Remove compressed watermelon from bag and cut into cubes. Top with slaw & oyster. Dress with uni sauce.
