Dish: Tom's Braised Short Ribs


6 short ribs, bone in
½ lb mushrooms, sliced
1 carrot, sliced
1 yellow onion, diced
½ bunch celery, diced
12 cloves garlic, diced
4 sprigs, fresh thyme
1 bottle red wine
1 cup beef stock
1 tsp brown sugar
1 tbsp balsamic vinegar
1 slice orange peel, chopped rough
Olive oil
Chili flakes

Season meat with salt and pepper. In a hotel pan, brown with wine and beef stock. Add thyme, chili flakes, balsamic & sugar.
Cover tightly with foil. Roast in 250F oven for 8 hours.
