Dish: Jen's Lobster Roll


1 lobster
1 loaf brioche bread, sliced thin
4 egg yolks
¼ cup olive oil
1 garlic clove
2 lemons, juice
1 lime, zest
1 lemon, zest
1 celery stalk, chopped fine
4 tbsp butter, brush brioche bread and toast
1 bunch tarragon


Boil the lobster in boiling salted water for 4-5 minutes. Shock in ice water.

Slice the brioche bread thin and butter both sides.

Put the egg yolks, olive oil, garlic clove, and lemon juice into a food processor to make aioli. Salt and pepper.

In a mixing bowl, combine chopped lobster, celery, chopped tarragon with 1 tbsp aioli at a time.

Grill brioche slices on a hot skillet on both sides.

Top each piece of brioche with lobster mixture and top with lemon or lime zest.
