Episode 304: New Year's: Tom's Stuffed Pork Tenderloin

Dish: Tom's Stuffed Pork Tenderloin


1 lb andouille sausage
2 ea pork tenderloin
1 tsp coriander, toasted and crushed
½ tsp cocoa powder
1 tsp smoked paprika
1 tsp brown sugar
½ tsp onion powder
½ tsp garlic powder
1 tbsp salt
½ tsp pepper
1 apple
1 pear
½ head cabbage
2 radish
1 carrot
½ mayo
2 tbsp rice vinegar
3 tbsp honey


Make a small slit all the way through the tenderloin. Insert the sausage lengthwise.

Combine all dry ingredients and rub liberally on pork. Roast at 375 for 20 minutes or until pork is to desired doneness.

Julienne all vegetables. Whisk together slaw dressing and pour over vegetables.

Serve with a good BBQ sauce.
