Dish: Tristen's Beef & Marrow with Brassica Puree


1 ea New York strip steak
1 head black garlic
2 tbsp miso
2 tbsp olive oil
Salt and pepper to taste
1 ea beef heart
2 oz olive oil
1 oz soy
1 oz miso
2 bunch broccoli florets
5 oz bone marrow
6 oz cream
2 oz beech mushrooms


Rub steaks with miso and black garlic, olive oil and salt and pepper. Marinate for 20 min and leave at room temp. Sear and serve medium rare.

Marinate beef heart in soy, olive oil, and miso. Sear rare and rest.

Char broccoli florets with bone marrow and mushrooms. Add spinach to keep green color. Add greens to cream and boil. Season with salt and pepper and blend. Add more bone marrow if needed.
