Dish: Vanessa's Green Thai Curry with Black Cod

Ingredients:

6 oz black cod
1 bunch cilantro
1 thumb ginger
1 shallot
2 clove garlic
1 stalk lemongrass, white part
1 lime juice
2 tbsp fish sauce
2 tbsp sugar
1 cup brown rice
1 tbsp coconut oil
1 cup coconut milk
1 bunch bok choy
1 tbsp salt


Directions:


Cut fish into smaller portions, pan sear. Add all ingredients for sauce (cilantro, chili, ginger, shallot, lemongrass) into mortar pestle. Mash into paste. Add paste into hot pan, add coconut milk, reduce and simmer, add fish sauce, sugar, and lime juice.


Steep brown rice until covered, dry in oven. Then fry in coconut oil until crispy. Top with steamed bok choy & fried rice over fish and sauce.
