NYCWFF Recipe: Genuine Superette Buttermilk Battered Chicken Sandwich

Buttermilk Battered Chicken Sandwich
 
Ingredients:

1 Martin’s Potato Roll, buttered and toasted
1 chicken breast, battered
2 oz. celeriac / apple slaw
1 oz. sambal mayo
1 oz. secret sauce
Cilantro for garnish
 
Method:

Dredge chicken breast until well coated.  Shake off excess and place in fryer.  Fry for 6-8 minutes until golden in color.  Remove from fryer and let rest.
 
Julienne green apples, celeriac, green cabbage and cilantro.  Toss with secret sauce.
 
Butter Martin’s Potato Roll and toast lightly.  Spread a thin layer sambal mayo on bottom bun.  Place fried chicken breast on bottom bun and top with slaw.  Garnish with cilantro sprigs.
 
Dredge ingredients:
Self-rising flour, chili spice (chili powder, celery salt, cayenne pepper and nutmeg) and salt and pepper.
